Irish Fish pie
Ingredients:
- 750g cod fillet
- 50g butter
- 50g flour
- 500ml milk
- 100g grated cheese
For scones:
- 1 cup flour
- 50g grated cheese
- 50g butter
- 1tsp baking powder
- 1 pinch salt
- 1 egg yolk
- milk
Directions:
Put the fillets in an oven proof dish.
Melt the butter. Add the flour and mix. Add the milk and keep stirring
until the mixture thickens. Stir in the cheese. Pour this sauce
over the fish.
For the scones: Rub the butter into the flour with the baking
powder and the salt. Add the grated cheese, the egg yolk and enough
milk to create a dough. Roll the dough out to a thickness of 1 cm
and cut into circles with a cutter.
Put the scones on top of the fish mixture and glaze with a little
milk.
Sprinkle more grated cheese over the top and bake at 220° C
for 25-30 minutes or until the top is golden brown.
